Nick and I decided on Friday that we were going to stay in our apartment all weekend long.. With the freezing temperatures outside, we figured it was only appropriate to make a delicious crockpot meal. We decided to try this recipe for BBQ chicken and I'm glad we did!!
What you'll need:
3 pounds boneless, skinless chicken breasts. (about 6 large...I used 4 large)
1 tbsp. onion powder
1 tbsp. paprika
2 cloves garlic, minced (I only used one)
1/2 tsp salt
1/2 tsp black pepper
1 cup beer. Any kind you like. (I used Budweiser but I would
recommend using something a little lighter.)
4 cups any BBQ sauce. (I used Original Sweet Baby Rays)
Steps:
1. Combine everything in the crockpot except the chicken.
2. Add the chicken and spoon the sauce on top to cover it.
3. Cook on low heat for about 6 hours.
4. Remove the chicken and shred.
5. Add the chicken back into the sauce, let sit for 15 minutes before serving.
That's it!! So easy!
The recipe suggested serving the chicken on a bun with cheese, coleslaw, and other traditional BBQ sides. We decided to use the meat for BBQ nachos. We piled our plates high with Fritos Scoops, BBQ chicken, shredded cheese, and sour cream. Healthy, I know. It was delicious and we continued to eat it throughout the weekend. The recipe made a ton of meat and would be great for any kind of gathering and perfect for getting through a busy weekend. I will definitely be making this again!!
